Avocados are an excellent source of dietary fiber, providing 40% of the Daily Value in a 1-cup serving. They also contain vitamins C and B-6, magnesium and potassium. Try this tasty recipe and reap all the benefits from this powerful superfood!
- 1 ripe avocado
- 2 large eggs
- 2-3 tablespoons salsa room temperature
- sea salt
- squeeze of lime
- red pepper flakes
- salt and pepper to taste
Preheat oven to 425 degrees.
Slice avocado in half, remove pit and remove 2 spoonfuls of flesh in each half. Place avocado in baking dish.
Sprinkle with sea salt and a squeeze of lime. Add a pinch of red pepper flakes if you like things spicy!
Crack 1 egg into each avocado half.
Bake in oven for 15 minutes or until egg whites are no longer clear. Remove from the oven and garnish with a few tablespoons of salsa; season to taste with salt and pepper.
