Beat the heat on those steamy summer days with these frozen, no-bake cookies. My go-to summer cookie recipe!
- 1/4 cup almond or non-dairy milk of choice
- 2 tbsp cacao powder
- 2 tbsp sugar
- 1/4 cup crunchy or smooth peanut butter
- 1 cup gluten-free oats (not instant or quick-cooking)
- 2 tsp unrefined, organic coconut oil
In a small saucepan, combine almond milk, cacao and sugar. Bring to a boil, then remove from heat. Stir in peanut butter. Add oats and coconut oil. Arrange spoonfuls on cookie sheet lined with wax paper. Freeze for four hours. (These can be eaten in less time, but they will be gooey!)
