  • 1 ripe avocado
  • 2 large eggs
  • 2-3 tablespoons salsa room temperature
  • sea salt
  • squeeze of lime
  • red pepper flakes
  • salt and pepper to taste


  1. Preheat oven to 425 degrees.

  2. Slice avocado in half, remove pit and remove 2 spoonfuls of flesh in each half. Place avocado in baking dish. 

  3. Sprinkle with sea salt and a squeeze of lime. Add a pinch of red pepper flakes if you like things spicy! 

  4. Crack 1 egg into each avocado half. 

  5. Bake in oven for 15 minutes or until egg whites are no longer clear. Remove from the oven and garnish with a few tablespoons of salsa; season to taste with salt and pepper.
